Yogurt has a natural tang that lends a dose of liveliness to any plate, and these carrots are no exception. They’re also herbaceous and sweet, thanks to ample thyme and honey.

Oh, and they’re really easy! Like, remarkably easy.

I suggest enjoying with friends amongst other Mediterranean-inspired flavors. You’ll have a crowd pleaser that won’t keep you away from the conversation.

Roasted Carrots with Yogurt, Thyme, and Honey

 

Ingredients:

1 bunch carrots, scrubbed and trimmed

8 sprigs fresh thyme

1 tablespoon honey, plus more for drizzling

½ cup Greek yogurt

olive oil to taste

salt and freshly ground black pepper to taste

Instructions:

Preheat the oven to 400 degrees.

On a baking sheet, lay the carrots on top of the thyme sprigs, being sure not to crowd the sheet. Coat with the honey, plus olive oil, salt, and pepper to taste.

Roast until caramelized, usually about 20-30 minutes. Once ready, remove and let cool.

Serve the roasted carrots and thyme over a bed of Greek yogurt. Drizzle lightly with honey and a bit of olive oil.
